Mike's Creamy Coconut Chicken Curry!

A bit of experimentation for last night's dinner, but it worked out pretty nicely - give this one a try if you like a mild chicken curry:

500g skinless diced chicken breast
1 can of creamy coconut milk
sprinkle of paprika
as much peas and corn as you like
1 small can of champignons, sliced & diced (easier for the kids to handle!)
1 tspn (not tbspn!) of curry powder
250ml cream (I use lactose free)

They're listed in the order that I added them to the pan, and the final product was served with steamed rice.
A true cook might shudder, but it went down pretty well with the family!

Maybe the best part about it is that Tim has been learning his alphabet this year, so we gave "Curly C" a real workout with our creamy coconut chicken curry!
